Chinese Food ~ At Home!

Yummy! 

I recently tried two different recipes for Chinese Take out staples; vegetable fried rice & sweet and sour chicken. I have never tried to cook my own Chinese food, and was very nervous to do so. Hubby's favorite type of food is Chinese food, so i figured I'd give it a try to save us some money (and calories!) on a homemade dinner.


Chinese Vegetable Fried Rice:

Ingredients Needed: 
- 3 Cups of Cooked White Rice (1 cup of dried rice = 3 cups of cooked rice)
- 3 Tblspns Oil 
- 1 Cup Frozen Mixed Vegetables (Thawed) 
- 1 Small White Onion, Chopped
- 2 Tspns Minced Garlic 
- 2 Eggs, Slightly Beaten 
- 1/4 Cup of Soy Sauce 
- Salt and Pepper to Taste
- 1 Green Onion, Chopped

How to : 
On Medium temperature heat the oil in a large pan. 
Add frozen vegetables, garlic and onion. Saute until cooked. 
Push Mix to one side of pan. Pour eggs into opposite side, and scramble. 
Add rice and soy sauce and mix well. Add green onions last. Let stand on lowest heat until ready to serve, stirring occasionally. Enjoy!


Baked Sweet & Sour Chicken: 

Ingredients Needed: 

Coating: 
- 3-4 Chicken Breasts 
- Salt and Pepper
- 1 Cup of Cornstarch 
- 2 Eggs, Beaten 
- 1/4 Cup of Canola Oil 

Sweet & Sour Sauce: 
- 3/4 Cup of Sugar 
- 4 Tblspns of Ketchup 
- 1/2 Cup of Distilled White Vinegar 
- 1 Tblspn Soy Sauce 
- 1 Tspn of Garlic Salt 

Preheat your Oven to 325 degrees. 
Rinse your chicken in water and cut into bite size pieces. 
Dip chicken in cornstarch until coated and then dip in the eggs. 
Heat oil in pan on medium heat and place chicken in pan. 
Salt and pepper chicken. Brown chicken, but do not cook through. 
Put chicken in greased pan. 
Mix all sauce ingredients well with a wisk and pour evenly over top of chicken. 
Bake for 1 hour turning every 15 minutes. 

The Finished Product. Yum-o!
